This is the ghee Himveda was created to protect: simple food, made slowly and close to its source. Fresh milk from our Pahadi cows in Kangra, Himachal Pradesh is first set into curd. The curd is then traditionally churned to separate makkhan, and that makkhan is slowly simmered until it becomes aromatic, golden ghee.
There is no need to rush a process that has been trusted in mountain homes for generations. We make it in small batches, with close attention to the milk, the churning and the slow heating that give Bilona ghee its familiar home-kitchen character.
Because real food comes from animals, seasons and small batches, its colour, aroma and texture may vary slightly. We do not force every jar to look factory-identical.
